Peaches– Of course! These are the main star of the show! Choose firm, flavorful peaches. The softer they are, the more mushy they will become when baked.
Lemon juice
Corn starch– I recommend getting a non GMO version if possible. It’s a small thing, but a good habit to get into.
Salt
Fresh milled soft wheat flour– Einkorn is a personal favorite of mine and what I used for this recipe, but any soft wheat will do. If you want to learn more about why I use fresh milled flour, click here.
Rolled oats– Bonus points if you flake your own oat groats!
Brown sugar– I don’t buy this ingredient, because I make my own brown sugar by adding 1 1/2 tablespoons of unsulphured blackstrap molasses per cup of cane sugar. Very simple, not to mention that pure molasses has a very rich nutrient profile. It contains iron, calcium, magnesium, potassium, and other minerals, plus has antioxidants, and anti-inflammatory properties.
Ground ginger, cinnamon, and nutmeg– These spices bring so much to the table in terms of warmth and flavor!
Vanilla extract– My personal favorite is Danncy’s Pure Mexican Vanilla, and I have it linked for you! They ofter dark and clear options, and I use both and love them!
Soft butter
Chopped pecans
Tools to make Georgia Peach & Pecan Crisp
Grain Mill- I use the Komo Classic Mill, and I love it so much!
9″x13″ pan or baking dish
Digital scales– Because I always recommend weighing your berries before you mill them, or your flour after milling, though this recipe definitely won’t vary as much as some.

How to Make Georgia Peach & Pecan Crisp
STEP: 1
First, prepare your peaches by slicing them into thin wedges. (You can also peel them if you don’t like the peelings. My mom always told us that’s where the good things are!) Then toss the peach slices and sugar together and let them sit. This allows for good juices to begin accumulating.
STEP 2:
Combine your syrup ingredients together in a small dish and set them aside.
Crumb Topping
STEP 1:
Start by preheating your oven to 350º F.
STEP 2:
In a medium sized bowl, mix together all of the dry topping ingredients.
STEP 3:
Next, cut in the soft butter and vanilla extract to create a crumbly mixture. Then add in the chopped nuts.
STEP 4:
Line a baking sheet with parchment paper and spread the crumbs out evenly.
STEP 5:
Bake the topping for 15 minutes. After the topping is finished baking, remove it from the oven and set it aside to cool.
Assemble the Crisp
STEP 1:
Pour the prepared syrup over the peach slices, and spread them in the bottom of the 9″x13″ pan or baking dish.
STEP 2:
Crumble up the topping and sprinkle it over the peach slices.
STEP 3:
Bake the peach crisp at 350º F for 40 minutes. Peaches should be soft and juices bubbling.
STEP 4:
Serve the crisp warm with ice cream.
Notes
The crumbs can be made ahead of time and stored in an airtight container.
The crisp will not keep well, as juices continue to ooze from the peaches and crumbs will get soggy.

12 firm peaches
1/2 cup cane sugar
- Syrup
8 teaspoons lemon juice
1 tablespoon corn starch
1/2 teaspoon cinnamon
1/4 teaspoon salt
- Crumb Topping
120 grams (approx. 1 cup) fresh milled soft wheat flour
1 cup rolled oats
3/4 cup brown sugar
2 teaspoons cinnamon
1 teaspoon ginger
1/2 teaspoon nutmeg
1/4 teaspoon salt
1 tablespoon vanilla extract
3/4 cup soft butter
1 cup chopped pecans
Directions
- Peel and slice peaches into 1/2 inch wedges. Gently toss the peaches and sugar together, and let sit while you prepare the rest of the ingredients.
- Combine syrup ingredients in a small dish and set aside.
- Crumb Topping
- Preheat oven to 350º F.
- Mix together all of the dry topping ingredients.
- Next, cut in soft butter and vanilla extract to create a crumbly mixture. Then mix in the chopped nuts.
- Spread topping mixture onto a parchment paper lined baking sheet.
- Bake for 15 minutes. After the topping is finished baking, remove from the oven and set aside.
- Prepare the Crisp
- Pour the syrup over peach slices and spread them in the bottom of a 9″x13″ pan.
- Crumble the topping and sprinkle over the peach slices.
- Bake at 350º F for 40 minutes.
- Serve warm with ice cream.
Notes
- Crumbs can be made ahead of time. They will get soggy if they sit on top of the peaches for a length of time.
