These ingredients are so basic, and ones that you’re sure to have on hand at any given moment. Repurposing leftovers into a brand new meal that your family will love is always a win, and these Sausage, Egg, & Cheese Breakfast Boats are certainly no exception!
One great thing about this recipe is its versatility. For example, you can create your own variations by adding bacon, peppers, mushrooms, or even spinach! Sometimes I make breakfast for supper, and this is definitely one of our favorites.
Two Baguettes– Here is my recipe to make the most delicious homemade Crusty French Baguettes! Also, just a warning, you may even find yourself making extra baguettes just for the perfect excuse to serve these breakfast boats!

Heavy Cream
Shredded Cheese– Any kind that you have on hand will do, but if I was going to make a suggestion, I’d say Cheddar cheese will give you the best flavor!

How to Make Sausage, Egg, & Cheese Breakfast Boats
STEP 1:
To begin, fry the sausage and onion together.
STEP 2:
Preheat your oven to 350º F while you prep the breakfast boats.
STEP 3:
You’ll need two large baguettes for this recipe. Prepare them by hollowing out the insides. The leftover bread makes excellent bread crumbs to use in other recipes! Leave about a half inch of bread on the sides and bottoms of the baguettes, then set them aside when finished.
STEP 4:
In a bowl, beat the eggs, cream, salt and pepper together. Then add in the sausage and onion mixture, and shredded cheese.
STEP 5:
Line a baking sheet with parchment paper, and place the hollowed out baguettes side by side. Pour in the sausage, egg, and cheese mix, making sure to divide it evenly between the two baguettes.
STEP 6:
Place them in the preheated oven and bake for 25-30 minutes, until the centers are set.
STEP 7:
Finally, remove them from the oven, allow them to cool for a few minutes, and then cut and serve warm!

2 baguettes
1/2 lb. sausage
2 tablespoons chopped onion
8 eggs
1/2 cup heavy cream
1 teaspoon salt
1/2 teaspoon pepper
1 cup shredded cheese
Directions
- Fry sausage and onion together.
- Preheat oven to 350º F.
- Hollow out the baguettes, leaving about a 1/2 inch of bread around the bottom and the sides. (This makes for some good bread crumbs!) Set the baguettes aside.
- Beat the eggs, cream, salt and pepper together. Then add in the fried sausage and shredded cheese.
- Line a baking sheet with parchment paper and place hollowed out baguettes side by side. Pour in the egg mixture, dividing between the two baguettes.
- Bake for 25-30 minutes, or until the centers are set.
- Cut and serve warm.
