Why Should You Make Them?

For starters, they are simple. Whip up this recipe in no time with a few basic ingredients you are sure to have on hand!

Secondly, you can give them to your kids guilt free, knowing that it will satisfy and nourish them. And who can resist the combination of chocolate and peanut butter? Though to be honest, I am one of those folks who actually can. I’m just not a huge peanut butter or chocolate fan. But, I was surprised how I found myself picking at these cookies. One or two with my morning coffee just hit right, and my husband is definitely a fan!

Ingredients You’ll Need

Eggs

Cane Sugar– Click here to find the brand I use. Both Aldi and Walmart carry the Zulka brand, which is great as well. Sourcing quality ingredients is very important to me!

Room Temperature Butter

Peanut Butter– I used smooth for this recipe.

Vanilla Extract– I’m particular about my vanilla, because manufactured vanilla flavor won’t produce the rich depth that true vanilla extract does. Here’s a link to my favorite Mexican Vanilla.

Fresh Milled Soft Wheat Flour– I used einkorn for this recipe, but other soft wheats will work as well. Azure Standard, and Ancient Grains are two places that I use to source high quality grain! Read this post to discover why I use fresh milled flour.

Flour Mill- I use the Komo Classic Mill and love it, but there are many other great options out there!

Digital Scales– Weighing your flour is not the answer to everything, but it does make a huge difference! When I learned to weigh my fresh milled flour, it increased the quality and consistency of the recipes I made.

Mixer- Handheld or stand, both work well!

How to Make FMF Peanut Butter Chocolate Chip Cookies

STEP 1:

Preheat your oven to 350º F. While the oven is preheating, prepare your cookie dough.

STEP 2:

Using a mixer, cream the eggs, cane sugar, soft butter, peanut butter, and vanilla extract together until fluffy.

STEP 3:

Combine dry ingredients separately, then gently fold into creamed mixture together with the chocolate chips. Be careful to not over mix.

I find it most efficient to weigh my wheat berries before milling, then the amount of flour that is produced is correct and there is never any excess.

STEP 4:

Scoop cookie dough onto an ungreased baking sheet. You may want to slightly flatten the dough balls as they won’t spread much while baking.

STEP 5:

Bake for 10-12 minutes or until slightly browned. When they are finished, remove baking sheet from oven and allow cookies to cool for a few minutes before removing from baking sheet.

A good tip is to only bake a couple cookies for the first round. Then you know if you need to adjust baking time or ingredients.

STEP 6:

Pour yourself a glass of milk and enjoy a couple warm, decadent peanut butter chocolate chip cookies!!

Ingredients

  • 2 eggs

  • 1 1/2 cups cane sugar

  • 1 cup butter (room temperature)

  • 1 cup peanut butter

  • 2 teaspoons vanilla extract

  • 330 grams (2 3/4 cups) fresh milled soft wheat flour

  • 1/2 teaspoon salt

  • 1 teaspoon baking soda

  • 1 cup chocolate chips

Directions

  • Preheat oven to 350º F.
  • Cream first 5 ingredients together until fluffy.
  • Combine the dry ingredients separately, then gently fold into the creamed mixture together with the chocolate chips. Do not over mix.
  • Scoop cookie dough onto an ungreased baking sheet. You may want to flatten the dough balls a bit because they don’t spread much while baking.
  • Bake for 10-12 minutes or until lightly browned. Remove from oven and let cool for a few minutes before removing from cookie sheet.
  • Pour yourself a glass of milk and enjoy a warm, decadent cookie!
