Berry Delicious Fresh Milled Fruit Cobbler

We spent last weekend with my husband’s parents, and his mom has a dream of a garden! I got to pick and bring home 3 ice cream pails full of ginormous blackberries. What richness!

Tools you’ll need to make Fresh Milled Fruit Cobbler

Grain Mill– my mill is the Komo Classic. I grind pretty much all of my flour on the finest setting, and it makes beautiful baked goods!

Digital Kitchen Scales– because I really recommend weighing your flour for consistent results.

10″ Cast Iron Skillet– not only is this skillet so multipurpose, it works incredibly well for baked goods. I use mine all the time!

Ingredients

1 quart of fresh or frozen fruit- Peaches, raspberries, cherries, blueberries, strawberries, or all of the above!

Cane sugar– I have officially banned white sugar from my kitchen since I found out that most white sugar is lightened with bone char. Disgusting.

Soft butter

An egg

Vanilla Extract– you can’t beat the Mexican kind!

Soft wheat berries- I used spelt for this recipe, but einkorn or soft white wheat would also work just as well! I talk more about why I use fresh milled wheat here.

Baking powder– I only use aluminum free baking powder.

Salt

Milk- the fats in raw milk do amazing things to baked goods!

Instructions for how to make Fresh Milled Fruit Cobbler.

Preheat your oven to 350º F.

In the meantime, spread your fruit in the bottom of a seasoned 10″ cast iron skillet.

In a bowl, cream together the softened butter, cane sugar, egg, and vanilla. Then combine flour, baking powder, and salt, and add alternately to batter with the milk. Be careful to not overmix.

Dollop the batter on top of fruit. Sprinkle a little extra sugar on the top to give it a flakey, caramelized surface.

Bake for 30-35 minutes or until a toothpick inserted into batter comes out clean.

Serve warm with ice cream!

  • 4 cups fresh or frozen fruit

  • 3/4 cup cane sugar

  • 1/4 cup soft butter

  • 1 egg

  • 1 teaspoon vanilla extract

  • 210 grams (approx. 1 3/4 cup) fresh milled soft wheat flour

  • 1 1/2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 3/4 cup milk

Directions

  • Preheat oven to 350º F.
  • Spread fruit into the bottom of a seasoned 10″ cast iron skillet.
  • Cream softened butter, sugar, egg and vanilla. Combine dry ingredients and add alternately with milk, being careful to not overmix.
  • Dollop batter on top of fruit. Sprinkle with a little extra sugar.
  • Bake for 30-35 minutes, or until toothpick inserted in to the batter comes out clean.
  • Serve immediately with ice cream.
