The ingredients for this recipe are so simple and basic!
Fresh milled soft wheat flour– I love to use einkorn for this recipe. I think it adds such a golden buttery flavor! Click here if you want to learn more about why I use fresh milled flour.
Baking powder– I always buy a brand without aluminum.
Salt
Buttermilk– This creates makes waffles so fluffy with that light tangy undertone. If you don’t have buttermilk on hand, it’s very easy to make! Just take a tablespoon of vinegar or lemon juice, and add enough whole milk to make 1 cup. Let it sit for 5-10 minutes, until it curdles and thickens. Then you can go ahead and add it to the rest of your recipe!
Eggs
Melted butter or oil– Butter will improve the flavor, but in this economy, oil works too!
Tools You’ll Need
Grain Mill– I use the Komo Fidibus Classic Mill, but there are a lot of other great options out there as well!
Waffle Iron– The tricky thing with waffle irons is the nonstick coating. Nonstick coatings are huge bearers of toxics and harmful chemicals, so I was quite tickled to find a waffle iron with a nontoxic ceramic finish that won’t chip or damage easily, and now I KNOW my waffles are nutritious!
Digital Scales– I very strongly recommend this tool in your kitchen, especially if you are new to using fresh milled flour. It will make your life so much easier, and take the guess work out of milling and trying to get consistent results.
How to Make Fresh Milled Waffles
STEP 1:
Combine all of the dry ingredients into a bowl.
STEP 2:
Mix the wet/liquid ingredients together.
STEP 3:
Add the liquid ingredients to the dry, mixing only until just combined. It’s okay if there are a few lumps.
STEP 4:
Bake your batter in a heated waffle iron.

Waffle Variations
My favorite way to eat fresh milled waffles is with good old real maple syrup and butter. There is just nothing like it! But waffles can be eaten both sweet and savory, and we also enjoy sausage gravy on our waffles. In the summertime, homemade whipped cream and fresh fruit on top of waffles make a delicious dessert! I also have many memories of coming home from school and putting leftover waffles in the toaster and eating them with butter and sugar and cinnamon.
Funny story. So when we were kids, my mom had this rule that we had to eat a pancake or waffle with protein (usually some type of gravy) before we could have a sweet one. One morning, she made chicken gravy, and something just didn’t seem right. It wouldn’t get thick and wouldn’t get thick, so she kept adding more and more cornstarch to try to get a gravy consistency. Finally she just decided to let it go and serve as was. Lo and behold, when we tasted it, there were some violent reactions. What she thought was cornstarch was actually powdered sugar! And thankfully, that morning she bent the rule. But we still laugh about that one!
Fluffy Fresh Milled Waffles

240 grams (2 cups) fresh milled soft wheat flour
1 tablespoon cane sugar
1 tablespoon baking powder
1 teaspoon salt
2 eggs
1/4 cup melted butter or oil
2 cups buttermilk
Directions
- In a bowl, combine all the dry ingredients.
- Next, in a separate bowl or measuring cup, mix all the wet ingredients.
- Then add the wet ingredients to the dry, mixing until just combined. It doesn’t matter if there are a few lumps.
- Bake in a hot waffle iron. To keep waffles warm, preheat your oven to 200º F and spread them out on a cookie sheet in the oven.
Notes
- If you don’t have buttermilk, you can simply use a tablespoon of vinegar or lemon juice and then add enough whole milk to make a cup. Let it sit for 5-10 minutes to curdle and thicken, then add to recipe.
- Leftover waffles can very easily be reheated in a toaster. It brings the original crispiness back.
- This batter can be used to make great pancakes.
